You need a “cut plan” for your project.
Someone who has done a Cabin Sole replacement on a 30C probably has one they can share and also some insight into tricks they learned doing the work.
I’d want to trace a full scale pattern of the pieces I was replacing and fit them out to make a cut plan. I’ve made my share of mistakes trying to work from measurements and no template.
I’m going to bet that you’ll need more than two sheets if you want perfect alignment of the light and dark wood where ends and sides meet.

IN case of interest, Greg Silver did a really nice write-up on his cabin sole replacement project. It’s posted on the www.nonsuch.org website under MEMBERS TIPS & PROJECTS.
He used Lonseal synthetic on top of marine plywood, but the process of laying out the pieces is the same.
