The cabin sole has delaminated due to prolonged soaking of the sole. I’m wondering if the sole can be replaced with some type of fiberglass insert instead of teak and holly. Could starboard of the appropriate thickness be used?

Randy I have just replaced my cabin sole on our NS 26 C. 199 . I purchased two 4 x 8 sheets of marine ply, (Teak and Holly) removed the old floor, ( sub floor is fibreglass) and used the old floor as a template. The Rare Woods store in Burlington Ontario Canada cut the new ply from the old template perfectly. The minor issue I had was the bull nosing on the underside ( to match the curvature of the FB sub floor did not quite match in every spot so the 5 centre pieces ( bilge area) required one pass through our club table saw 1/8 inch and bingo we have a brand new floor. 7 coats of poly over that to counteract that Wilcox C head occasional over flow, due to heavy weather sailing and I’m good for as long as I’ll be around. I don’t think I would tackle an insert of fibreglass as you have one already. What ever you use make sure you screw lengths are correct. You can go through the hull if you are not careful. Is starboard the laminate used in bathroom shower stalls? If you use that you can purchase Teak and Holly vinyl flooring with acceptable results.
We are flooded at Macassa Bay Y C and I expect you will have delays as well.
